Review
I absolutely love this book both for reading straight through and for diving into the recipes. Rich & Julie have done an excellent job of making a plant-based lifestyle not only super easy & accessible to anyone (including families with small, sometimes picky children), they've also managed to include the importance of ethical sourcing & thoughtful eating without feeling preachy or judgmental. On top of all of this, the recipes are absolutely delicious & crazy easy!
Julie (Rich's co-author & wife) is the mastermind in the kitchen & her cooking style is quick & easy with amazing attention to detail in the blending of flavors & infusing her creations with love & positivity. I've been cooking my way through the book & even my carnivore husband has been gobbling up the delicious meals that have resulted from this book. She uses easy to source ingredients & most recipes serve 4-6 so our family of 3 usually has enough for 1 meal & lunch leftovers the following day.
I highly recommend making a double batch of her veggie burgers on the weekend as they save really well in the fridge & are perfect for snacking on or supplementing a smaller meal during the week. We wrapped our in blanched collards & each of us added the toppings we liked best. Mine had jalapeño sauerkraut, lemony dressing, walnut parmesan & a little dijon mustard. Dan had Chipotle mayo & walnut parmesan. Cairo, our 5 year-old, just dipped his in a lot of catsup, lol. Add a big side salad or a side of fresh veggies like carrots & bell pepper slices & they make for a really filling & energizing meal that you can be happy to feed your family.
I'm still working my way through the rest of the recipes, but I just couldn't wait any longer to share my review. There are also recipes for a bunch of sauces, soups, salads, smoothies, hearty meals & even desserts that are packed with nutrients & healthy whole foods. Raw apple pie sweetened with dates, anyone? I'm making the peanut butter cookies for the guys this weekend & I'm sure they'll be a hit!
